My Story

Hi, and Welcome!

I like to eat. Actually, I LOVE to eat (who doesn’t)? I started this blog as an outlet for the countless hours I’ve spent in the kitchen wiping flour from my shirt and swatting away smoke plumes, scribbling recipes and re-measuring, trying to perfect a plethora of vegetarian “masterpieces” with the intent to deliver quick, nutritious, and delicious plant-based meals. Ironically, I used to hate cooking, and was prone to nearly burning down my kitchen on more than a few occasions. In fact, growing up, I couldn't be caught dead in the kitchen and dreaded helping prepare Thanksgiving dinner. However, I learned quickly in college that it was essential for me to prepare healthy, economical meals (or face the bleak alternatives of starvation or a diet of Top Ramen, neither of which appealed to me). I first became interested in plant-based diets in my late teens, and once I started studying nutrition in college, I was quickly sold on the health benefits and sustainability of vegetarian eating.

My name is Natalie Colla – food and nutrition enthusiast, lover of the outdoors and travel, and a proponent for powering your health through plant-based eating. I’m also a Registered Dietitian, Licensed Dietitian, and Certified Diabetes Educator with a Bachelor's degree in food science and nutrition.

My parents were both foresters and I grew up on a small farm in northern Idaho, where eating fresh from the garden and caring for the land and animals around me instilled a deep sense of appreciation for the natural environment as well as an awareness of health from an early age.

Enter this blog, which is a culmination of my passions surrounding food, health, the outdoors, and travel. Designed to offer  nutrition tips, food and travel fun, vegetarian and vegan-friendly recipes for all seasons and occasions, food and wine pairings, and evidence-based information on the hottest topics in health all while striving to be environmentally conscious, I hope that my readers walk away feeling empowered to take charge of their health and never be afraid to explore new horizons.

When I’m not blogging, you can find me in my natural environment: the great outdoors, which typically involves skiing in the winter and hiking to an alpine paradise in the summer. When it’s time to relax, you’ll find me plotting and scheming my next grand travel adventure, perusing farmer’s market stands for inspiration, or simply snuggled up to a good book with a cup of tea in hand.
